What's for Dinner, Tues., Jan. 27, 2026

Stir-fry vegetables over multi-color quinoa. The veggies are broccoli, carrots, and garlic. I added crispy tofu cubes in orange sauce and put sesame sauce over it.

Kombucha: cherry.

Dessert: Apple blossom.

Caesar salad with creamy dressing and real anchovies.

Angel hair pasta with a fresh marinara sauce I've been cooking all afternoon as I worked.

Argentinian beef filets I scored at a specialty butcher shop in Nueva Gorgona. (Good beef is hard to find in Panama but the chicken, pork and seafood are superior.) They're marinating in olive oil, red wine, salt & pepper and minced garlic. I'll grill them on our electric grill, (no propane or charcoal allowed in our building).

Dulce de Leche ice cream for dessert.

I made a container of pimento cheese when it snowed 8 inches here Saturday so it will be a sandwich with the soup. Yogurt parfait with berries and walnuts.. Last week I bought clam chowder at TJ's. I was surprised how good it was. Tasted as good as some I ordered from Legal Seafood and a lot cheaper.

3. Goat curry

made with a lamb rogan josh recipe. And homemade naan.

Don't turn up your nose at goat, BTW. It tastes like lamb. I discovered this when I lived in Richmond and used to eat lunch at this little Indian place around the corner. IIRC it was called Royal India. It didn't look very royal but they had a kickass lunch buffet and often had a goat curry which was yummy. They left the bones in. I don't. Cutting the meat off the bones is a pain in the patoot, especially when the meat is still partially frozen, but I've got it marinating now.and it's destined for the Instant Pot ina couple of hours.

5. Spaghetti Squash Primavera

Microwaved the squash and scooped out the strands. Steam-fried in evoo and veggie broth: chopped onion, red bell pepper, zucchini, shredded kale, sliced mushrooms and minced garlic. When almost done I added halved cherry tomatoes, black beans and a couple chopped vegan breakfast sausages. Finally I added back the spaghetti squash and seasoned with basil, oregano and fresh chopped parsley. TJ’s vegan parm on top after plating. With all the snowblowing I’ve done over the last few days I think I’m going to treat myself with a nice glass of Pinot Noir. Cheers!🥂

… with some Quorn (chicken-like chunks made from mushroom) added in. Had a yen for it a few weeks back but made a huge batch and ended up freezing two tubs of it. NOT a frozen burrito or other lazy cheat. Yay me!
