What's for Dinner, Wed., Jan. 28, 2026

Salmon and Corn Chowder. Salmon filet with Yukon Gold potatoes. Corn, onion, heavy cream, thinly sliced basil leaves. Clam broth.

To go with it, lightly toasted Naan bread, olive oil butter.

Sparkling apple cider and cherry kombucha.

Dessert: Caramel marshmallow chocolate from the Christmas chocolates.

My husband had an apparent allergic reaction to something in the goat curry last night so I'm considering maybe a vegetarian meal. Possibly palak dal (lentils and spinach) with rice, or else I'll make pho ga (Vietnamese version of congee) which is good for general upsets. I guess I won't be serving him goat again! He had to take 50 mg. of Benadryl and complains of feeling hung over today. I told him to ask his dr. for a prescription for an Epipen at his next appointment.

6. Tofu "Egg Salad" Wraps

Start with a block of drained and mashed firm tofu. Add equal amounts of minced red onion, red bell pepper, and celery. Slice up some black olives and radishes and add to the veggies. Stir in a few good dollops of mayonnaise, a big squirt of Dijon mustard and a few Tbsps of sweet pickle relish and nutritional yeast. I spread the salad on lavash flat bread slathered with walnut balsamic dressing and added sliced tomatoes and a big handful of spring mix before rolling up the wrap. Date chia pudding for dessert. Cheers!🥂

7. Steak sandwiches

Sauteed thin sliced beef with bell pepper, onions and cheese on a sub roll. It was seasoned nicely and I think TJ put some Worcester sauce on it.

I'm worn out working on snow removal. It is only six inches but the top two are ice requiring pounding to break it up in chunks and these chunks are heavy. I've been working on it for three days and do 15 minutes and then a minimum 45 minute break. It's all my old back and shoulders will do. A neighbor pushed a path with a little ATV yesterday so TJ had a spot to park. The ATV tears up the gravel so I asked him to do the minimum. I think this darn stuff will stick around for weeks.

Ducky couldn't care less about the snow. The crust supports him as he runs around his pen and makes it easy to spot any cats to bark at.

And we have the same situation where the top part of the snow is ice, which requires breaking it into pieces. Yes, the pieces are heavy. It was so slick that I fell and hit my head on a glass table, not to mention injuring my knee, too. It was so slick that I could not get up and had to inch my way into the front entrance just to find a surface where I could get traction. I feel like I'm going to fall asleep right now.

Not so good to fall. Hope you are not damaged much.

I was very careful. Clearing a little, then salting and then going on a break. After clearing the porch and steps I didn't stand anywhere that wasn't cleared.

I went out his morning and tried busting more up but the small hoe that I call a grubbing hoe just made a hole and I wasn't able to pry chunks up. Ten or so bangs with it would loosen a small chunk. This is much worse than yesterday. I gave up and I'm making a mug of Earl Grey to drown my sorrows in and wait for the thaw in a week or two or three.
