What's for Dinner, Thurs., April 9, 2026

Stir fry vegetables (broccoli, carrots, scallions, multi-colored peppers, zucchini). Thinly sliced beef. Toasted sesame seeds over the top.

I'm substituting quinoa for rice.

Kombucha, cherry.

Dessert: toasted banana nut bread with vanilla ice cream.

I could eat morels everyday, and never get tired of eating them.

Pics of the morels are in the breakfast thread.

More rain expected over the next few days. Great mushrooming weather.

I grew up in eastern Iowa and every spring, we’d go tromp in the woods and come home with garbage bags of them (each of us!)

Ever since I moved to FL (over 30 years ago?), I’ve been starved for them—until I discovered a good mail order place. For those similarly deprived, I highly recommend Forest Glory. They usually have a sale. I usually get 6 canisters (about the size of a soda can) of dried small morels/pieces for around $35 or so, and I dive into one every time the yearning gets too much to ignore.

This might be the biggest thing I really miss about the Midwest. Yum.

my Dad and I would take off mushrooming. I don't know what I liked more... just being out in the woods, or being out in the woods with my Dad. I always learned so much from him when we did things like this. Now that I'm older, I'm really missing his take on life and missing him, even more so today.

Parboiled a large eggplant, sliced the top off lengthwise and scooped out the pulp. I made a filling of sautéed diced onion, yellow bell pepper, chopped zucchini, grated carrots, minced garlic, sliced mushrooms, toasted breadcrumbs, black beans, vegan sausage crumbles, minced garlic, chopped fresh basil, oregano and parsley. After stuffing the eggplant I covered it in foil and baked it for about an hour. Marinara and vegan parm on top after plating. Cheers!🥂

Warmed up leftover with a big dollop of sour cream and a generous dash of Texas Pete.
Warmed up leftover apple crisp with a small scoop of low carb vanilla ice cream.
