What's for Dinner, Fri., April 10, 2026

Open face chicken burgers with garlic-rosemary mayo on artisan roll. Caramelized onions on top.

I made this recipe up myself and was happy with the way it turned out: Zoodled Zucchini salad with Goat Cheese. I used both zucchini and yellow crookneck squash, zoodled. Added some zoodled onions, too. Olive oil vinaigrette over the top. About 1/2 cup of quinoa for crunchiness and appearance.

You could also use queso fresco cheese with this, but if you do, make sure it's room temp.

Blueberry basil kombucha.

Vanilla ice cream with a chocolate cookie for dessert, along with decaf coffee.

Made my usual recipe with a can of wild caught salmon that included minced red onion, red bell pepper, bread crumbs, lemon juice, chopped parsley, dried rosemary and hot sauce. Also made red mashed parsley potatoes and steamed brussel sprouts with mushrooms. Cheers!🥂

3. Bean soup and a turkey sandwich

I mined the very bottom of the freezer this afternoon and found ham and ham stock from November. So it was time for ham bean soup with great northern beans, carrot, onion, celery, garlic, black pepper, bay leaf and a touch of cumin. The broth and ham can vary greatly in taste and aroma so I decide on the seasonings at the moment. Sometimes mustard or chili powder seems to be needed.

Sandwich of turkey breast with tomato slices and mayo on whole wheat.

Ducky enjoyed some of the ham trimmings as I cooked and he had some of TJ's ham from her soup, but his manna from heaven moment was when a thick slice of turkey fell from my sandwich onto the floor.
