Birria tacos. Kind of a messy meal to have at a restaurant, but I was between appointments in another town, so I had to dine out. This was such a delicious lunch that I ordered a second one to take home for dinner!
Except then I remembered I have a dinner party to go to this evening. Oh, well! Tomorrow for the birria.
I like this so much I looked up recipes for it, and one of my fave cooks, Nagi at RecipeTin, has something that looks worthwhile.
p.s. to IrisBlue, yes one was an apptmt with my doc about the hand. Everything is OK, and thanks to everyone for your concern yesterday!

(25,098 posts)Tortilla chips with spicy salsa and homemade guacamole served with an olive medley. Frozen margaritas.
Entree
Fajitas with grilled marinated skirt steak, grilled onions and peppers, chopped lettuce, cubed tomatoes served with flour tortillas and yellow rice & refried beans.
Dessert
Flan and Carajillo: 2 oz Licor 43 (a Spanish vanilla-citrus liqueur) paired with 2 oz hot espresso, served over ice.
It's a lovely day in the Catskills and we're looking forward to our neighbors sharing the meal with us. Glad your hand is okay, NJCher!

(2,115 posts)I made hummus for dinnerwhich was good, except I found my son ate most of my pita chipsbut Im always looking for inspiration for things to mix it up. Its easy to fall into the same routines and those tacos look like a guilty pleasure I must try out.
