What's for Dinner, Sun., June 14, 2026

Roasted beet and goat cheese salad.

Red tip lettuce tossed with goat cheese and beets. Toasted walnuts on top. Creamy dressing, homemade. Frizzled shallots, crispy.

Dessert: vanilla ice cream with salted caramel chocolate chip cookie on top. I put the cookie in the air fryer to bake and then it melts over the ice cream. Yum.

2. Cabbage and noodles Part 2

Today, I cubed 8ox. of tofu, boiled it and gave it a quick soak in the bacon marinade I had used a few weeks ago. I drained the tofu, fried it with onion and garlic, removed from the pan and fried the cabbage with spices. Made noodles in their own pot, then combined everything. It turned out good.

Frozen blueberries for dessert.

Work night for TJ.

There is a large selection of food stuffs needing eating.

I'll start with
Shells and cheese
Steamed broccoli
Burger with pepper jack, tomato and lettuce

Perhaps more later

5. Finally had my chili

(The one I gave my recipe for yesterday.)

Huge batch and we’ll be eating it for days, but it *is* good. Will probably have it another meal, then as it gets thicker, it’ll reappear in quesadillas, burritos, and bean dip.

I love it when someone here inspires me to mix up our lazy routine.

I used Just Egg egg substitute and baked the frittata in the oven. It had onion, red bell pepper, broccoli, sliced mushrooms and crumbled vegan bacon in it. Cheers!🥂
