What's for Dinner, Thurs., June 25, 2026

I made up various sandwiches on seeded bakery bread. It is such good bread, with oats and seeds! I made turkey breast with turkey bacon and avocado, BLTs, and shrimp salad. They are small sandwiches, so whenever I get hungry, I'll take a break and have one. I also have various chips available--dill pickle, tostado, with French onion dip.

It's scary how June is almost closing out and I still have a section of garden to put in, so I'm just going to keep working until it's done today.

Dessert later tonight will be low-sugar vanilla ice cream with a salted caramel chocolate chip cookie.

I actually made the chili last night, so it's technically leftover, but it's always better the second day!

The chicken won't be done for awhile. My daughters had kung pao brussels sprouts the other day, and I thought I'd try making those for myself. I used frozen sprouts. I thawed them slightly so I could cut them in half. Salt and pepper, roasted them in olive oil at 425, and tossed in a few unsalted peanuts in just before the sprouts were ready. I have kung pao sauce and used that. I enjoyed them.

I had some ice cream earlier. Almost every day I was away, someone mentioned ice cream. We were about 20 miles from town. Between distance and timing, didn't get ice cream. I haven't bought any for months, and got some today. Yum!

With mashed potatoes & gravy made with the pan drippings. That should keep body and soul together for a few meals.

Also made a wedge salad for myself. Had to use up the iceberg lettuce, bacon, and tomatoes from when I made BLT’s a few days back. I also kept a few of the large lettuce leaves to use for chicken, lettuce wraps before I cut the wedge out of the lettuce.

Slow baked pork back ribs (not ready yet - at least an hour to go. )
Baked sweet potato
Likely some veggies from frozen, but will decide what later on.

Steam-fried in evoo and veggie broth: chopped onion, red bell pepper, cabbage, sliced mushrooms, minced ginger and garlic. When done I added air-fried tofu cubes, cooked whole wheat spaghetti and a sauce I made of hoisin sauce, soy sauce, rice vinegar, agave and hot pepper flakes. Gave it a good toss and added chopped scallions after plating. Cheers!🥂
