Stuffed mushrooms. Those little salad shrimp, sweet red pepper, onion, garlic, Italian seasonings, mainly basil and oregano, salt and of course, the chopped mushroom stems. Panko crumbs cooked in butter over the top.
Chopped salad using oak leaf and red tip lettuce, carrot, parsley, garlic, Vidalia, celery, red radish, yellow and green squash, and a few cherry tomatoes.
Ginger kombucha.
Dessert: Green tea mochi and passionfruit cold tea.

Tuesday -we ordered Mexican. Our normal Mexican restaurant was closed due to viewing or rented out? Not sure.
Last night was Crepes (not really Belgian) with a delicious chicken and mushroom sauce. Belgian waffles (okay frozen store bought but good) with a homemade mix of chocolates and Nutella.

(23,799 posts)My daughter really likes Korean gochujang paste. I got a small container of it when I was in the international market a couple weeks ago. I marinated boiled tofu in soy, garlic, gochujang paste, and sesame oil. Stir-fried onions and zuchinni in olive oil and sesame oil, with a few pepper flakes. I cooked corn on the cob and cut about 1/2 cup off one cob. When the veggies were cooked, I fried the tofu in the same pan. Cooked a pack of plain ramen noodles for the base. I got about 2 servings. Garnished my dinner with some cucumber pieces. For the first try, it was pretty good
I got everything prepared in about 1/2 hour. Cooked the corn, set it aside, used the water to boil/simmer the tofu.
I will have some thing cold for dessert.

Getting groceries tomorrow, so Ill have something more interesting food-wise going on in the next few days.
