On January 2nd, I turned the key on my Mazda 5 minivan and the engine made a peculiar noise. It turned out that peculiar sound was the engine blowing its seals, and basically dying. I owed two years plus of payments. The next day, January 3rd, I bought a Ford Focus and three days later, I got rear-ended in a hit-and-run and as it happens, enough damage happened that it was totaled. I had to refinance my house to get out of the financial burden I was under, and it turns out that refinancing your house takes a LONG time.

What's this about? When I refinanced my plan was to buy a new oven. My old one had a gas leak, and i wasn't able to actually get one until today. I finally, after well over a year, have a working oven. Tonight I made baked potatoes au gratin with sage pork sausage, and it was yummy.

So now I can bake again, and there are dozens of things I want to make which I finally can make, but I can't make them all at once. I want to make cookies, breaded pork tenderloin, crustless quiche, pork potato pie and biscuits & gravy. And so many more.

I am almost giddy!
