Corn: I cut the corn off 5 ears and roasted it in my air fryer on a sheet pan.
Hard shell tacos using Beyond crumbles, lettuce, grated cheese, guacamole, and chopped onion. Pineapple salsa.
Dessert: Apple blossom with low-sugar vanilla ice cream. Chopped ginger crystals over the top.
